Baking with active sourdough is a long process that starts with feeding your starter to make sure it is active at the time you are preparing the recipe. If you're a beginner, it's helpful to have a schedule to understand how much time is needed between feeding your starter, mixing your dough, and letting it rest. Here are two example schedules:
Schedule 1:
Day 1 | 9-10pm: Feed your starter (make sure you have a lot because this recipe uses 200g).
Day 2 | 6-8am: Mix your ingredients together and knead your dough.
Day 2 | 3-5pm: Make your loaf and place in loaf pan.
Day 2 | 6-8pm: Bake your loaf when it's risen about 2+ inches above the top of the loaf pan.
Schedule 2:
Day 1 | 4-5pm: Feed your starter (make sure you have a lot because this recipe uses 200g).
Day 1 | 9-11pm: Mix your ingredients together and knead your dough.
